Going meatless, even if just one day a week
It’s Monday. Back to school, back to work. Back home, and everyone wants to know, “What’s for dinner?” Well, we could have lentils, tofu, black beans, chickpeas, tempeh, nuts, seeds, legumes, cheese, yogurt, eggs… any number and combination of meatless forms of protein along side vegetables and whole grains.
It’s Monday, we’ve jumped on board the internationally recognized “Meatless Monday” train, and it’s quickly gaining steam. The concept is simple: for environmental, climate change, economic and personal heath reasons, replacing meat with a non-meat protein just one day a week makes a significant amount of sense.
